I (heart) Tex-Mex food, and I’m glad to see it getting its due in the Times today. My signature Tex-Mex dish is turkey enchiladas (using turkey is the only nod to health in this generally artery-clogging dish) smothered with lots and lots of cheese. Mmm…

And they are amazing. Sort of creamy, and deep yellow/orange, and uneven in size and color. Some were brown, others white.
